Core Techniques

Comparison matrix distinguishes dry heat using air, radiation or fat; moist heat using water, other liquid or steam, including water-bath sous vide; and combination cooking with dry and moist stages.
The defining difference is the cooking medium and sequence. Water-bath sous vide belongs with moist-heat techniques here; it does not inherently combine dry and moist stages.
